In general, baked goods should
be stored in airtight containers
to protect the products from air
and moisture and prevent staleness.
Most dry items like crispy cookies,
cakes, brownies and quick breads
are best stored at room temperature
for about fi ve days, while items containing
dairy or high moisture content,
such as cream-fi lled pastries
and muffi ns, need refrigeration. For
long-term storage, baked goods can
be frozen but ensure they are completely
cooled before packaging to
prevent sogginess. When freezing
food, quality will decline the longer
it is frozen.
