Oysters serve an important ecological
function in the Great South Bay
One oyster can fi lter up to 50 gallons of water
per day. They also provide marine
habitat for other species.
There are currently over 26 acres of active
oyster farms in the Great South Bay
(with another 1,500 acres planned).
The Blue Point Oyster was at one point the
only oyster served at Buckingham Palace.
They are world-renown for their delicious taste
and can only be grown in the Great South Bay.
Save The Great South Bay is restoring wild
oysters through its Oyster Project and
has four active oyster sanctuaries.
They are working with volunteers to grow
baby oysters at several local yacht clubs.
These oysters will be translated into the
sanctuaries at the end of the growing season.
