Try this simple vegetarian chili recipe for a delicious,
nutritious and affordable meal, and freeze the leftovers
for future enjoyment.
Vegetarian Chili
4 servings
Ingredients:
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
2 carrots, chopped
2 peppers (green, red, yellow
or orange), chopped
1 cup of fresh leafy greens
(chard, spinach, baby kale or similar),
chopped
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon salt
1 teaspoon cinnamon
3 cups cooked beans
(red, black or white)
1+1/4 cup water or vegetable stock
2 tablespoons tomato paste
Directions:
1. Heat the oil in a large pot or skillet.
Add onion and garlic, and saute until onions
begin to brown.
2. Add the vegetables, tomato paste
and seasonings. Stir, then saute for 10
minutes.
3. Add the remaining ingredients. Cover
and simmer for 15 to 20 minutes or until
vegetables are tender.
4. Enjoy as a stew, or serve
over rice, quinoa or barley.
